📖 Recipe Steps

This is a simple recipe you’ll want to make again and again! The entire process takes about 8 minutes. Here’s how to make the best Chinese sweet and sour sauce, step by step.

  1. Add sugar, corn starch and salt to a small pot. Whisk to combine and remove lumps.
  2. Add water, rice vinegar, Shaoxing wine, soy sauce, and red food coloring to the pot.
  3. Whisk until the mixture is smooth.
  4. Place pot over medium heat. Continuously whisk until mixture comes to a boil. The sauce should be thick, smooth and clear. Remove from heat. If the desired consistency has not yet been reached, continue to stir the mixture in the hot pan after the heat has been turned off. If the thickened sauce is boiled for too long, it will break (lose its ability to emulsify) and become thin! Immediately transfer sweet and sour sauce to a small bowl.

🧑🏼‍🍳 Recipe FAQs

To make sweet and sour sauce gluten-free, use gluten-free soy sauce or tamari instead of traditional soy sauce. Additionally, ensure that any other ingredients you use, such as vinegar and sweeteners, are also gluten-free.

Yes, you can use various types of vinegar such as rice vinegar, apple cider vinegar, or white vinegar. However, rice vinegar is typically preferred for its milder flavor that complements the sweetness of the sauce.

Yes, you can make sweet and sour sauce without cornstarch. However, cornstarch is commonly used to thicken the sauce. If you prefer not to use cornstarch, you can try alternatives such as arrowroot powder or tapioca starch for thickening.

Yes, you can add heat to your sweet and sour sauce by incorporating ingredients like chili flakes, sriracha sauce, or diced chili peppers. Adjust the amount to your desired level of spiciness, tasting as you go to ensure it’s not too overwhelming.

To achieve a glossy and shiny finish, make sure to dissolve the sugar completely in the sauce and cook it until it thickens to the desired consistency. But be careful not to overcook, as the cornstarch in the sauce can dull the sauce’s shine if overcooked. You can also add a small amount of oil, such as sesame oil, towards the end of cooking to enhance the shine.

Yes, you can store homemade sweet and sour sauce in an airtight container in the refrigerator for up to a week. It may thicken slightly upon cooling, but you can reheat it gently on the stove or in the microwave and stir well before serving.

Yes, you can freeze homemade sweet and sour sauce. Allow it to cool completely before transferring it to freezer-safe containers or bags. Leave some room for expansion, then seal tightly and freeze for up to three months. Thaw in the refrigerator before reheating and serving.
